From the “Shodan”, a fishing troller moored in Vancouver alongside the Pacific Provider, come our delicious Tuna loins. Peter, the skipper, caught these Albacore Tuna in October just off of Nootka Sound on the West Coast of Vancouver Island. They were flash frozen at sea, and processed from a frozen state into loins that are approximately 1.5 lbs each.
Fresh Albacore has a mild to medium flavor profile with firm flesh and large flakes. Like other tunas, it has a “steak-like” texture, but less firm than Yellowfin or Bigeye Tuna. It does however have a higher fat content which gives it a richness of taste.
our customers suggestion is to roll the loin in sesame seeds then sear quickly in sesame oil. Slice the loin into 1 inch slices and serve over a salad or rice.

A word of warning: Some of the fillets have a few large, razor sharp bones in them. Gently run your fingers along the edges of the fillets to feel for these bones before you handle them for cooking. The bones are easy to pull out or cut out because they are fairly large. The bones are usually found in the thin flat belly flaps on the belly loins
