From the “Shodan,” a fishing troller moored in Vancouver, come our delectable Albacore Tuna loins. Skipper Peter brings these prized catches from the warm currents just off Nootka Sound on the West Coast of Vancouver Island, where Albacore Tuna are found migrating with the seasonal influxes of warm water across the Pacific Coastline. Due to their highly migratory nature and temperature-dependent location, these tuna are not always abundant, making them a prized catch and a valuable addition to our freezer holds for market distribution.

Flash frozen at sea to preserve their freshness and quality, the tuna are then processed into loins, each approximately 1.5 lbs. Fresh Albacore Tuna offers a mild to medium flavor profile, with firm flesh and large flakes. While it shares the “steak-like” texture common to other tunas, it is less firm than Yellowfin or Bigeye Tuna, yet boasts a higher fat content that gives it a rich taste.

Our customers often suggest rolling the loin in sesame seeds before quickly searing it in sesame oil. Slice the loin into 1-inch pieces and serve them over a salad or rice to enjoy this mouthwatering dish.

A word of warning: Some of the fillets have a few large, razor sharp bones in them.  Gently run your fingers along the edges of the fillets to feel for these bones before you handle them  for cooking. The bones are easy to pull out or cut out because they are fairly large.  The bones are usually found in the thin flat belly flaps on the belly loins
